The exact figure
The thermochemical calorie is defined as exactly 4.184 joules, so the conversion carries no uncertainty. A rough mental version is to multiply calories by four and add a bit, or divide kilojoules by four and subtract a bit.
The joule is the SI unit of energy and applies to everything — food, electricity, mechanical work — which is why countries that fully adopted metric measures use kilojoules on food labels rather than maintaining a separate food-specific unit.
The capital C problem
The word "calorie" means two different things differing by a factor of a thousand. A scientific calorie is the energy needed to raise one gram of water by one degree Celsius. A nutritional Calorie — conventionally capitalised — is a kilocalorie, a thousand of those.
Every food label uses the second. A chocolate bar listed at 250 calories contains 250 kcal, which is 250,000 scientific calories, or 1,046 kJ. The capitalisation convention that was supposed to distinguish them is almost universally ignored, so context has to do the work: if the number relates to food, it is kilocalories.
This is why the converter above is labelled kcal rather than cal. Treating a food label's number as scientific calories understates the energy by a factor of a thousand.
Which countries use which
Australia and New Zealand label food in kilojoules, with calories often absent entirely. The European Union requires both, printed side by side. The United States, Canada and the United Kingdom lead with calories, though UK labels frequently show kilojoules as well.
The practical consequence for travellers is that an Australian menu showing 8,700 kJ as a daily reference intake is stating the same thing as a British menu showing 2,000 kcal. Neither number is more scientific than the other; they are the same quantity in different units.
What the numbers do and do not tell you
Energy content is measured by how much heat a food releases when burned, adjusted for what the body can actually absorb. That is a real physical quantity and the conversion above is exact arithmetic on it.
What it does not capture is how the body responds. Digestion itself consumes energy, and it consumes noticeably more for protein than for fat or carbohydrate. Fibre passes through largely unabsorbed. Food processing and preparation change availability. Two foods with identical labelled energy can behave differently, which is why energy content alone is an incomplete description of a diet.
